WRAP UP! ....it's cold out there


SINGLE SWISS CHARD WRAP

After returning home from a frigid walk with HUGH I was starving and looking for something quick and easy to make. I ate 2 full wraps. Feel free to add nuts, seeds and beans in the filling. I just used what I had in my fridge. This wrap was definitely high in GREENS which is always great especially in this freezing weather. I refuse to get a cold and the chlorophyll from greens are a BIG immune booster.

INGREDIENTS (for single wrap)
de-veined Swiss Chard Leaf
 WRAP
-Swiss Chard Leaf, lg
  (de-vein the thick pt of stem)
 
SALAD FILLING
-ARUGULA, 1 c

-ZUCCHINI, 1 sm ea, use peeler to slice
-Vine-RIPE TOMATO, 1/2 ea, sliced
-BASIL, 6 leaves ea
-CELERY, 2 ribs, sliced thin
-AVOCADO, 1/2, sliced into quarters
-EXTRA VIRGIN OLIVE OIL, 2 tsp
-APPLE CIDER VINEGAR,  1 TBSP
-SEA SALT TO TASTE


PROCEDURE
WRAP UP SALAD IN LEAF LIKE A BURRITO. CUT IN HALF.
