PASTA COMFORT FOOD





Today for a late lunch I made a really easy RAW pasta with zucchini noodles, dehydrated Brussels sprouts,  Red bell pepper, Onion and cherry Tomatoes seasoned with garlic, lemon zest, salt, red chili flakes and fresh Basil. 

INGREDIENTS for 1 LARGE serving

CRISPY BRUSSELS SPROUTS, PEPPERS AND ONION
-Brussels Sprouts, 2 c, de-stem, halve
-Red Bell Pepper, 1/2, slice thin
-Yellow Onion, 1/4 c, chop
-Garlic, 1 clove, grated
-Lemon zest, 1/4 tsp
-Extra Virgin Olive Oil, 3 Tbsp
-Sea Salt to taste
-Crushed Red Chili Flakes, pinch

Mix ingredients together in bowl. 
Lay out on dehydrator screen.
Dehydrate at 115 degrees for 2 hours to soften and get crisp.

CHERRY TOMATOES
Cherry tomatoes, 7 ea, quarter
Extra Virgin Olive Oil, 1 Tbsp
Sea Salt, to taste
Fresh Basil Leaves, 8 ea, chopped 

Mix ingredients in bowl.
Lay out on dehydrator screen for about an hr to soften

"NOODLES"
-Zucchini, 2 ea, peel (discard skin + stop peeling at seeds)
  *I chop up the "core" and add to bowl for more mass
-Extra Virgin Olive Oil, 2 Tbsp
-Sea Salt to taste

Mix ingredients in  bowl.
Place bowl in dehydrator for 20-30 minutes to warm before plating.


TO SERVE
Mix all components together in medium bowl. Season with sea salt and garnish with fresh ground black pepper and fresh chopped basil.

PLEASE NOTE:
You can add chopped nuts for added protein and fat. I have recently been uninterested in them so my main source of fat is from olive oil and Avocados. I can easily eat 1-2 a day! Dark Greens are also a source of protein which I eat by the handful literally...Ask Dan. He has witnessed me more than on one occasion eating Arugula straight out of the box. 

Also, if you do not have a dehydrator but would like to be RAW it is still 100% possible. I was 95% RAW for a length of time without a dehydrator. For example this recipe could still be made without placing components in dehydrator. You could simply shred the brussels sprouts and keep everything else as stated in the recipe. You could also keep the prepped items out at room temp for 30 minutes before eating so they are not cold from being in the fridge. I am all about quick, easy recipes that are filling and satisfying. I would say the majority of my meals involve SALADS. Think of all of the salad combinations you could make with the huge variety of greens, vegetables, fruit, nuts and seeds available to you. The possibilities are endless! And you can always go the Smoothie Route for a meal on the run if you don't have the time to chop a bunch of produce. 
And... if you are looking to just incorporate some RAW meals into your life that is a great BIG step! Health Improvements are possible with the mere incorporation of more RAW food in your diet, especially Greens!
