Today Dan and I were watching THE FOOD NETWORK and we saw Bobby Flay making his extreme hamburger. I knew immediately that Dan wanted a burger for dinner.... so I made him a RAW VEGAN version. Dan did tell me that he wanted to eat vegan as much as possible outside of work... let the games begin!
INGREDIENTS
-Sunflower, (soaked for 8 hours) 2 c
-Cauliflower, 1+1/2 c
-Extra Virgin Olive Oil 1/2 c
-Ground Cumin, 1 Tbsp
-Cayenne 1/8 tsp
BLEND IN FOOD PROCESSOR UNTIL SMOOTH.TRANSFER TO MEDIUM BOWL
-Crimini Mushroom, 2 c
BLEND SMOOTH IN FOOD PROCESSOR. TRANSFER TO BOWL
- Yellow Onion, chopped, 1/2 c
- Scallion, 4 ea, chopped
PULSE IN FOOD PROCESSOR TO CHUNKY. TRANSFER TO BOWL
- Celery, 2 c, chopped
PULSE IN PROCESSOR TO CHUNKY. TRANSFER TO BOWL
-Flat Leaf Parsley, 1/2 bu, de-stemmed
-Baby Spinach, 2 c
-Lemon zest, 1 Tbsp
-Lemon Juice, 2 Tbsp
-BLEND UNTIL FINE IN FOOD PROCESSOR. TRANSFER TO BOWL
-MIX EVERYTHING TOGETHER. SEASON TO TASTE WITH SALT
-USE ICE CREAM SCOOP (2+2/3 oz) TO LAY OUT
-YIELD ABOUT 18 BURGERS
-LAY ON TRAY WITH TEFLEX SHEET (1 HR OR SO) UNTIL YOU CAN FLIP THEM
ONTO SCREEN
-DEHYDRATE AT 115 DEGREES
-DEHYDRATE TO DESIRED CONSISTENCY (about 4 hrs-may take longer if batter is more wet)

Dan and I garnished our burgers with sliced vine-ripe tomato, Avocado and Basil. I also placed each burger on a bed of dressed Baby Arugula and a square of Purple Cabbage.
Although I appreciated how genuinely excited Dan was to try the burger I did give him FAIR WARNING that it does not taste ANYTHING like a beef burger.... or any meat for that matter. He did however enjoy it!...I choose to believe that he is being honest.
Hugh was very disappointed that he could not taste them...
